250grams(1 cup) buttersoftened to room temperature
225grams(1 cup) caster sugar
1tspvanilla
3largeeggs
3overripe bananas
250grams(2 cups) self raising flour
1tspground cinnamon
Instructions
Preheat the oven to 180°C / 355°F conventional, or 160°C / 320°F fan forced.
In a large bowl, cream the butter, sugar, and vanilla together using an electric mixer until light and fluffy, for approximately 3 minutes.
Add the eggs one at a time, beating well after each addition.
Add the peeled bananas in chunks, and beat until they are pureed and thoroughly mixed through the batter.
Use a wooden spoon or sturdy spatula to gently fold in the flour and cinnamon until just combined.
Pour the batter into the cake tin and bake on the centre rack of your oven for about 1 hour and 20 minutes. All ovens vary, so consider checking for doneness at the 60 minute mark.

DIY Self-Raising Flour: If you only have plain flour (all-purpose flour) on hand, you can easily make your own for this recipe! Simply combine 250g (2 cups) of plain flour with 4 teaspoons of baking powder, and sift them together well before folding them into your batter.
